INGREDIENTS:
1/2 beef fillet
1 handful rocket
1 lemon
Parmesan shavings
For the citronette dressing:
Lemon juice
oil
Salt
1. Cut the raw fillet into very fine slices. Place the slices on the bottom of a dish and cover with rocket and parmesan shavings.
2. Prepare the dressing. Mix the lemon juice with oil and season to taste.
3. Dress the carpaccio and finish by decorating wwith a slice of lemon.
