INGREDIENTS:
bar yellow gulaman, shredded
1 can (432g) Fruit Cocktail, drained (ad water to syrup to make 1-3/4 cups)
2/3 cup sugar
1 tsp vanilla extract
3/4 cup evaporated milk
3 pc eggs
1/2 cup sugar (for caramelized sugar)
1. Using a non stick pan, cook sugar over low heat until just melted (caramelized sugar). Divide into 3 pans/ molds. Spread 3/4 of fruit cocktail at the bottom of pans. Set aside.
2. Add gulaman and sugar in syrup-water mixture. Boil until gulaman has dissolved, then strain. Return the liquid into the pan. Keep it warm.
3. In a bowl, using wire whisk, beat eggs until creamy. Strain on bowl. Stir milk and vanilla. Mix gulaman. Cook gulaman, Cook over low heat with constant stirring for 2 minutes.
4. Add remaining Fruit Cocktail. Pour into prepared molds with caramelized sugar. Cver and chill until set.
